Ostrich Shish Kebabs  HT  MC  20mins plus marinating



Serves 4      Hot   Game   Alcohol  Main Course  brochettes  Healthy Eating  Dairy Gluten Wheat Free  Eggless




   450g/1lb Ostrich Steak, cut into 2.5cm/1 inch cubes

   1 Onion, thinly sliced

   Salt and Black Pepper

   60ml/2fl.oz. Dry Sherry

   1 tbsp Vegetable Oil

   1 teasp Freshly chopped Oregano





1. Mix all the ingredients, excluding the ostrich steak, in a bowl and blend well.


2. Transfer the ostrich steak to a shallow dish and cover with the marinade, tossing to coat the meat well. Cover  and refrigerate for 6-12 hours or overnight.


3. Heat the grill to hot. Thread the ostrich cubes onto skewers.


4. Grill  for 10 to 12 minutes turning frequently. Serve hot.

Key techniques

Brown  to  -  To fry in very shallow  fat  over a high heat in order to colour the food and seal in the juices.
