450g/1lb Turkey Breast, cut into 1cm/˝
1 teasp Oil
For the Marinade
1 Garlic Clove, crushed
The grated rind and Juice of ˝ Lime
2 teasp Taco Relish
1 teasp Freshly chopped Coriander
Taco Relish to garnish
In a bowl, mix together the marinade ingredients. Add the turkey, stir to coat
well, cover and refrigerate for 2-3 hours.
Preheat the oven to 140C, 275F, Gas Mark 1. Stack the tortillas, wrap in
aluminium foil and place in the oven to warm through.
Heat the oil in a large frying pan, add the marinated turkey
and stir-fry for
about 10 minutes, until crisp and golden.
Divide the turkey between the tortillas and top with the lettuce, chopped tomatoes
and taco relish. Serve immediately.
