Homemade Vanilla Extract CD Veg ACC 7 weeks
Makes 480ml/16fl.oz. Cold Vegetarian Vegan Gluten Wheat Dairy Free Eggless Ingredient
Ingredients 2 whole Vanilla Pods 300ml/10fl.oz. Brandy or Vodka 150ml/5fl.oz. Water 225g/8oz 1 Granulated Sugar
Instructions
1. Split the vanilla pods lengthways with the tip of a sharp knife then cut into short lengths.
2. Place the vanilla and brandy in a large glass jar which has a tight-fitting lid. Cover with the lid and allow to stand at room temperature for 3 weeks, shaking the container vigorously every 3 days.
3. Strain liquid through a double layer of cheesecloth, very fine sieve or coffee filter into a mixing bowl.
4. In a medium saucepan, combine the water and sugar over medium heat. Bring to the boil, stirring constantly, and cook until sugar dissolves.
5. Remove from heat and cool then add to the vanilla mixture, stirring to thoroughly combine. Pour mixture into a sterilised bottle, cover with a screw top lid and allow to stand at room temperature for 1 month.
Use as for shop-bought vanilla extract or essence.
