Sweet & Sour Corn Salad

Ingredients 225g/8oz
Tinned Sweetcorn
Kernels,
2 tbsp White Wine
Vinegar 3 tbsp Vegetable
Oil Salt and Pepper 450g/1lb Cold
Boiled Potatoes 225g/8oz Tomatoes 225g/8oz Tin
Pineapple Chunks 2 Bananas,
peeled and sliced 5 tbsp Lemon Juice Lettuce leaves to serve For the Dressing 1

Mustard 150ml/5fl.oz.
Natural Yogurt or Soured Cream 2 tbsp Milk Salt and pepper 1 teasp Paprika
Instructions
1. Place the sweet corn in a mixing bowl and add the vinegar, oil, salt
and pepper.
2. Peel and dice the cooked potatoes and slice the tomatoes lengthways.
3. Drain the pineapple chunks, reserving 2 tablespoons of the juice.

5. To serve - Arrange the lettuce leaves on the base of a wide serving dish. Place the sweetcorn mixture in the centre and spoon the potato mixture around the sweet corn. Serve cold.
