Ingredients
2 tbsp Vegetable Oil
1 Onion, halved and thinly sliced
1 tbsp Peanut oil
50g/2oz Peanuts , very finely chopped
2 tbsp freshly chopped Coriander (Cilantro) Leaves
2 Green Chillies, finely chopped
2 tbsp freshly squeezed Lime Juice
8 Green Tomatoes, chopped

Instructions
1. Heat the vegetable oil in a frying pan, add the onions and fry for 5-8
minutes or until browned.
2. Transfer the onions from the pan to a serving bowl with a slotted spoon then
add the remaining ingredients and toss to mix well. Serve at room temperature.
