Hot Lettuce Salad HT ACC 30mins
Serves 4 Hot Pork Vegetables Accompaniment Salads Gluten Wheat Dairy Free Eggless
Ingredients 1 Large Webb's Lettuce 225g/8oz Streaky Bacon 6 Spring Onions, sliced on the diagonal 2 tbsp Sesame Seeds 1 teasp Demerara Sugar 1 tbsp Wine or Cider Vinegar 1 tbsp Water Salt and Black Pepper
Instructions
1. Remove any damaged outer leaves from the lettuce then cut into 8 wedges. Wash well without dislodging the leaves and pat dry with kitchen paper and arrange on a serving platter.
2. Cut the bacon into 2.5cm/1 inch squares.
3. Heat a large frying pan over a high heat until very hot, add the bacon and fry until the fat begins to run and the bacon is golden.
4. Add the sliced spring onions to the pan and fry until crisp and golden.
5. Sprinkle in the sesame seeds and fry for 2-3 minutes then stir in the sugar, vinegar and water and cook for a few minutes, stirring with a wooden spoon, scraping up any bits which are stuck to the pan.
6. Season the mixture with salt and pepper then pour over the lettuce wedges. Serve immediately.
