Spinach & Bacon Salad CD ACC 15mins Serves 4 Cold Pork Vegetables Salads Accompaniment Gluten Wheat Dairy Free Eggless
Ingredients: 225g/8 oz Streaky Bacon 450g/1 lb Fresh Young Spinach leaves 1 Onion, very thinly sliced Freshly Ground Black Pepper
Instructions
1. Wash the spinach well in cold running water then dry thoroughly, remove any stalks and shred. Place in a large salad bowl together with the onion rings.
2. Chop the bacon and fry in a dry frying pan until crisp and brown.
3. Pour the hot bacon bits and any fat over the spinach and onions and quickly toss to incorporate the bacon and coat the spinach. Serve immediately.
