Avocado and Pine Nut Salad Veg CD ACC 15mins plus chilling Serves 4 Cold Vegetarian Fruit Vegetables Herbs Nuts Salads Accompaniment Gluten Wheat Free Eggless Ingredients: 2 Large ripe Avocados, skinned, halved and stoned 1 tbsp Lemon Juice 4 Gherkins, thinly sliced 2 tbsp Pine Nuts 3 tbsp Olive Oil Salt and Black Pepper 2 Garlic Cloves, crushed 8 Fresh Mint Leaves, finely shredded 4 tbsp Natural Yoghurt Instructions 1. Dice the avocado flesh and put into a bowl. Sprinkle with lemon juice and toss lightly till the avocado is coated. Add salt pepper and pine nuts, then sprinkle with the oil and mix well. 2. In another bowl, mix together the mint, garlic and yogurt. Pour over the avocado and toss lightly. Chill for 1 hour. 3. To serve - divide the salad between individual dishes and serve immediately .
