Cider and Cucumber Salad Veg

4 Cold Vegetarian Vegetables
Alcohol Salads Accompaniment
Dairy Free Eggless
tbsp Fresh Parsley, chopped
and White Pepper
1 Large Cucumber
In a large bowl, mix together the cider, parsley, sugar salt and pepper.
Cut the cucumber in half lengthways and scoop out the seeds with a teaspoon. Thinly slice then add to the bowl
containing the dressing. Mix well then refrigerate
for at least 1 hour.
To serve - Toss well again and serve at once.
