Coleslaw Veg CD ACC 10mins plus standing Serves 4 Cold Vegetarian Vegetables Salads Accompaniment
Ingredients: 1 Small Firm White Cabbage 3 Carrots 3 tbsp Olive Oil 2 tbsp Wine Vinegar Salt and Pepper 6 tbsp Mayonnaise
Instructions
1. Cut the cabbage into quarters, remove the core and very finely shred. Place in a large mixing bowl. Grate the carrot onto the cabbage.
2. Add the olive oil, vinegar, salt pepper and mayonnaise and mix thoroughly. Allow the coleslaw to stand for a while before serving.
