Feta and Green Bean Salad

Accompaniment Gluten Wheat Free Eggless
Green Beans, topped and tailed
Red Onion, thinly sliced
1 Garlic Clove,
3 tbsp Cider or
Salt and Black
1 tbsp Freshly
1. Bring a saucepan of
lightly salted water to the boil, add the beans and cook for 5-8 minutes, until
just tender. Drain and place them in cold water to stop them
they may turn a dull green.
2. For the dressing, in a small bowl, mix together the garlic,
vinegar, salt and freshly ground black pepper then whisk in
the Olive oil and add the mint.
3. To serve - transfer the beans to a salad bowl then add the
onion, almonds and Feta cheese. Pour over the dressing and toss well.
