Radicchio Salad Veg CD ACC Italian 30mins
Serves 4 Cold Vegetarian Vegetables Herbs Alcohol Salads Accompaniment Italy Europe
Ingredients For the Dressing 2 Garlic Cloves, crushed 1 teasp Mustard 2 tbsp Olive Oil 1 tbsp White Wine 1 Gherkin, finely chopped1 tbsp Capers, finely chopped 1 tbsp Fresh Parsley, choppedOther Ingredients 1 Small Webb's Lettuce 2 Heads of Radicchio 1 Small Onion, sliced into ringsInstructions 1. Trim, wash and dry the lettuce and radicchio leaves. Arrange the onion in the bottom of a salad bowl and place the lettuce and radicchio on top. Place in the fridge and leave to crisp for 15 minutes. 2. Meanwhile, in a bowl, mix together the garlic, mustard, oil and vinegar then stir in the gherkin, parsley and capers. 3. To serve - pour the dressing over salad and toss lightly.
