Russian Salad Veg CD ACC 10mins plus chilling Serves 4 Cold Vegetarian Vegetables Salads Accompaniment Gluten Wheat free
Ingredients: 175g/6oz Cooked Peas 175g/6oz Cooked Potatoes 175g/6oz Cooked French Beans 75g/3oz Cooked Turnips 175g/6oz Cooked Carrots 3 tbsp Olive Oil 1 Tbsp Wine Vinegar Salt and Pepper Lettuce leaves to serve Mayonnaise to serve (check ingredients)
Instructions
1. Cut all the vegetables into small dice and place in a large bowl. Pour over the oil, vinegar, salt and pepper and mix thoroughly.
2. Leave in a cold place for at least 2 hours, turning occasionally.
3. To serve - Give a final stir, pile onto a platter lined with lettuce leaves and top with a coating of mayonnaise.
