Blueberry Relish

Ingredients:

Large Red Onions, thinly sliced
120ml/4fl.oz.
Olive Oil
4
tbsp Dark Brown Sugar
75g/3oz
Dried Blueberries
120ml/4fl.oz.
Cider Vinegar
Salt
Instructions
1.
Place the onion slices in a bowl, cover with cold water and leave to soak for 1 hour. Drain and dry well on kitchen paper.
2.
Heat the oil and sugar in a pan, stirring all the time until the sugar
dissolves. Add
the onion rings and cook over a low heat for 15-20 minutes, until very soft.
3.
Stir in the blueberries and vinegar and continue to simmer until most of the liquid has evaporated. Season with salt to taste.
