cucumber, sliced 1
Carrot, thinly sliced 1
Onion, thinly sliced 2
Red Chili Peppers, thinly sliced 200g/7oz
Cabbage, finely shredded 60ml/2fl.oz.
Water 120ml/4fl.oz.
Vinegar 50g/2oz
Sugar Plenty
of Salt Instructions 1.
Place all the vegetables in a large bowl sprinkle liberally with salt and mix
with your hands, rubbing the salt into the vegetables. Cover and set aside for 3
hours. 2.
Meanwhile, place the water, vinegar and sugar in a large saucepan and bring to
the boil Remove from the heat and allow to cool. 3.
After the marinating time, rinse the vegetables well under cold running
water to remove the salt. 4. Place the vegetables in a deep bowl and pour the vinegar mixture over the top. Cover and refrigerate for 24 hours. Serve cold as an accompaniment to main course dishes. Can also be bottled in sterilised jars.
