Peach Salsa Veg CD ACC 15mins plus resting
Serves 4 Cold Vegetarian Vegan Fruit Vegetables Herbs Accompaniment salsas Healthy Eating Eggless Gluten Wheat Dairy Free
Ingredients 3 ripe Peaches 4 Spring Onions, finely chopped 50g/2oz Yellow Capsicum (sweet Pepper), deseeded and chopped The juice of ½ a Lime 1 tbsp freshly chopped Coriander Black Pepper A few drops of Tabasco Sauce (Check ingredients)
Instructions
1. Peel the peaches, remove the stone and finely dice the flesh.
2. Place in a mixing bowl together with the remaining ingredients and mix well.
Cover and set aside for at least 1 hour to allow the flavours to develop.
