Rhubarb Salsa Veg CD ACC 10mins
Serves 4-6 Cold Vegetarian Vegan Fruit Accompaniment Gluten Wheat Dairy Free Eggless
Ingredients 25g/8oz Rhubarb, finely diced 1/2 Red Capsicum (Sweet Pepper), finely diced 1/2 Yellow Capsicum (Sweet Pepper), finely diced 2 tbsp Freshly chopped Coriander (Cilantro) 3 Spring Onions, chopped 1 Chilli Pepper, deseeded and finely chopped 2 tbsp Lime Juice Brown Sugar, Salt and Pepper to taste
Instructions
1. Blanch the rhubarb in boiling water for 10 seconds. Drain in a colander and refresh under cold running water. Drain again and place in a large mixing bowl.
2. Add the remaining ingredients and mix well.
Goes well with fish or chicken.
