Salsa Fresca Recipe

Mexican Name: (Pico De Gallo)

The name of this salsa literally means Fresh. This is a basic but popular salsa which can be served with almost anything.

8 Firm Tomatoes
1 Onion, finely chopped
1 Red Capsicum (sweet pepper), deseeded
3 Jalapenos or 3 Serrano Chillies, stalk removed
2 tbsp freshly chopped Coriander (cilantro)
2 tbsp freshly chopped Parsley
The juice of 1 Lime



1.  Chop the tomatoes, onion and capsicum with a sharp knife into fine dice and place in a large mixing bowl.

2. Finely chop the chillies, coriander and parsley and add to the tomato mixture together with the lime juice and salt and turn to coat using a large metal spoon. Refrigerate until ready to serve.

Serving Suggestions

Serve as an accompaniment to meats, poultry and fish

If you prefer a milder salsa, deseed the chillies
