Tomatillo Salsa Verde Recipe

This South American salsa recipe should not to be confused with the European version which is much smoother and uses herbs to colour it green.

675g/1½lb Tomatillos or Green Tomatoes
1 Small Onion, roughly chopped
6 tbsp Coriander (cilantro) leaves
3 Tbsp fresh Lime Juice
½ teasp Sugar
2 Jalapeño or Serrano Chillies, stemmed and deseeded



1.  Remove the papery husks from the tomatillos and wash well then place them in a saucepan, cover with water, bring to the boil and simmer for 5 minutes.


2. Drain the tomatillos well then place in a food processor together with the remaining ingredients and pulse until all ingredients are quite finely chopped. Cool in refrigerator.

Tips, Options and Substitutions


The tomatillos can also be grilled or baked until instead of being boiled which will make them more flavoursome

If you prefer a milder salsa, deseed the chillies

Serving Suggestions
Serve as a dip or as an accompaniment to meats, poultry and fish
