A Weekday Menu Recipe

Tomato and Cucumber Salsa    Veg   CD  ACC  10mins

 

Serves 4   Cold   Vegetarian  Vegan  Herbs  Vegetables  Accompaniment  salsas   Healthy Eating   Gluten Wheat Dairy Free  Eggless 

 

Ingredients:

4 Ripe Tomatoes, chopped

1 Red Onion, thinly sliced

15cm/6-inches Cucumber, diced

1 Garlic Clove, crushed

1 tbsp Freshly chopped Basil

1 tbsp Freshly Chopped Mint

˝ Chilli, deseeded and finely

Grated rind of ˝ Lemon

1 tbsp Lemon Juice

Black Pepper

 

 

Instructions

 

1. In a bowl place the onion, tomatoes, cucumber chili, garlic, basil and mint and mix lightly.

 

2. Add lemon rind and juice, and mix well. Sprinkle with pepper and serve.

Common terms used when making sauces

Blend - To mix together ingredients, usually of different consistencies, to a smooth and even texture, utilising a utensil such as a wooden spoon or blender.

Coats a spoon – when a substance is rendered thin/thick enough so that when a wooden or metal spoon is inserted into it and taken out, the substance leaves a thin film “coating the spoon”.
Emulsify  - The blending of two liquids that don't naturally combine or dissolve into each other without agitation, or that aren't mutually soluble. The classic examples are oil and water, French dressing and mayonnaise
