Tomato and Cucumber Salsa Veg CD ACC 10mins
Serves 4 Cold Vegetarian Vegan Herbs Vegetables Accompaniment salsas Healthy Eating Gluten Wheat Dairy Free Eggless
Ingredients: 4 Ripe Tomatoes, chopped 1 Red Onion, thinly sliced15cm/6-inches Cucumber, diced 1 Garlic Clove, crushed 1 tbsp Freshly chopped Basil1 tbsp Freshly Chopped Mint ½ Chilli, deseeded and finely Grated rind of ½ Lemon 1 tbsp Lemon Juice Black Pepper
Instructions 1. In a bowl place the onion, tomatoes, cucumber chili, garlic, basil and mint and mix lightly. 2. Add lemon rind and juice, and mix well. Sprinkle with pepper and serve.
