Serves 6-8 Cold Vegetarian Vegan

Wheat Dairy Free Eggless
450g/1lb Watermelon, peeled, seeded and diced
1 Green Capsicum (Sweet Pepper), chopped
2 tbsp Lime Juice
˝ Red Onion, very finely chopped
1 tbsp Freshly Chopped Coriander (cilantro)
1-2 Chillies, deseeded and very finely chopped
1. Place all the ingredients in a large mixing bowl, mix well then chill until
ready to serve.
