Serves 4-6 Cold Vegetarian
salsas Healthy Eating Gluten Wheat Dairy Free Eggless
Papaya, peeled, seeded and cut into 12.5mm/˝ inch cubes
1 Small Red Chili, seeded and finely chopped
150g/5oz Red Onion, chopped
1 Red Capsicum
(Sweet Pepper), chopped
25g/1oz Freshly Chopped Mint
2 tbsp Lime juice
In a bowl, mix together all the ingredients. Cover and refrigerate about 30
minutes or until chilled.
