Serves 4-6 Cold

120ml/4fl.oz Olive Oil
120ml/4fl.oz Red Wine Vinegar
3 tbsp freshly chopped Oregano
3 tbsp freshly chopped Parsley
2 Garlic Cloves, very finely chopped
½ teasp Chili Pepper Flakes
1. Place all the
ingredients in a blender and process until well blended relatively smooth.
2. Cover and leave
to stand for at least 2 hours at room temperature before serving.
