Peach BBQ Sauce

Accompaniment Barbecue Savoury Sauce
4 Fresh Peaches, peeled, stoned and finely chopped
1 small Onion, finely chopped
60ml/2 fl.oz. Chilli Sauce
2 teasp Dijon Mustard
1. Place the peaches and sugar in a medium saucepan, add sufficient water to
just cover, bring to the boil, stirring, then reduce the heat slight, partially
cover and cook for 10-15 minutes .
2. Meanwhile, melt the butter in a saucepan, add the onions and fry gently until
soft and transparent.
3. Add the peaches and their liquor plus the remaining ingredients to the
onions, bring to the boil then reduce the heat and simmer, uncovered, for 15
minutes, stirring occasionally. Serve hot with poultry or game.
