Anchovy Sauce for Beef HT ACC 20mins Hot Fish Savoury Sauces Accompaniment Ingredients: 3 tinned Anchovy Fillets Flour for coating 25g/1oz Butter 250ml/ 10 fl.oz Stock A pinch of Nutmeg Pepper 4 Gherkins, diced 1 tbsp Capers Instructions 1. Rinse the anchovy fillets in cold water then dry, chop finely, coat well with flour and fry them in the butter until soft.
2. Add the stock, nutmeg, pepper and gherkins and simmer gently until slightly thickened.
3. Add the capers just before serving.
