2 ripe Bananas

The peel of half a Lemon

300ml/10 fl.oz Water

150ml/5 fl.oz Sweet Sherry




1. Peel the bananas and rub through a sieve or puree in a blender.


2. Put the water into a pan with the lemon peel and sugar and bring to the boil. Add the banana puree and boil for 10 minutes. Add the sherry and bring to the boil again. Strain before serving.
