Basil and Tomato Sauce

1 tbsp Olive Oil
1 Onion, finely chopped
2 Garlic Cloves, crushed
450g/1lb tinned Chopped Tomatoes
2 tbsp Sweet Sherry
2 tbsp Freshly chopped Basil
2 tbsp Freshly chopped Parsley
1 teasp Sugar
Salt and Black Pepper
Heat the oil in a pan, add the onion and garlic and sauté until soft, stirring
Add the tomatoes, water, sugar, salt, pepper and sherry, bring to boil then
simmer, uncovered, for 20 minutes
or until thickened.
Add the herbs, mix well and serve immediately.
