Onion, finely chopped
Danish Blue Cheese
fl.oz Medium-dry sherry
fl.oz Single Cream
Fry the onion in the butter until soft and transparent.
Crumble most of the cheese into the pan and add the mustard and cream.
Bring to the boil stirring all the time. Add
salt and pepper and cook for a few minutes
Just before serving, crumble the remaining cheese into the sauce.
