Brandy Sauce is traditionally served at Christmas or Easter with Christmas pudding or hot mince pies

Ingredients: 3 Egg yolks 150ml/5fl.oz Double Cream 1 Dessertspoon Demerara Sugar 120ml/4 fl.oz Cognac
Instructions
1. In a bowl, mix the egg yolks with the cream the add the sugar and Cognac.
2. Beat well then place the bowl in a pan of hot water and stir until thickened.
