Butter Icing Recipe

Butter icing, also called butter cream, is a sweet mixture most often used to fill and decorate cakes including sandwich cakes, layer cakes and cupcakes.

Prep and cooking time:� 10 mins

Ingredients for a basic Butter Icing (Butter Cream)

�

50g/2oz Softened Butter

�

100g/4oz Icing Sugar

�

�

Instructions for making Butter Icing (Butter Cream)

�

1. Place the softened butter in a�mixing bowl and sift the icing sugar over the top.
�
2. Add the flavouring of your choice if using (see below) and cream all the ingredients together with a wooden spoon until well blended. Use as required (see below).

This is enough to decorate 6 cupcakes

Amounts of Butter Icing (butter cream) needed:-

To top a� 15cm/6 inch cake�

: 50g/2oz Butter �� 100g/4oz Icing Sugar

�(approx 1 cup)

To

fill a� 15cm/6 inch cake�: 50g/2oz Butter �� 100g/4oz Icing Sugar

�(approx 1 cup)

To top and fill a 15cm cake

: �100g/4oz Butter � 225g/8oz Icing Sugar

(approx 2 cups)

To top, fill and side coat a 15cm/6 inch cake�

: 225g/8oz Butter � 450g/1lb Icing Sugar

(approx 4 cups)

To top a 20cm/8 inch cake

: 100g/4oz Butter � 225g/8oz Icing Sugar

(approx 2 cups)

To

fill a 20cm/8 inch cake: 100g/4oz Butter � 225g/8oz Icing Sugar

(approx 2 cups)

To top and fill a 20cm/8 inch cake

: �225g/8oz Butter � 450g/1lb Icing Sugar

�(approx 4 cups)

To top, fill and side coat a 20cm/8 inch cake�

: 350g/12oz Butter � 675g/1� lb Icing Sugar

�(approx 6 cups)

Flavoured Butter Icing Recipes

Here are just a few ideas for flavoured butter icing. The amounts below should be added to:-

50g/2oz Butter and

100g/4oz Icing Sugar

but can be multiplied as needed.

Banana Butter Icing

50g/2oz Ripe Bananas, mashed

� teasp Vanilla Extract

� teasp Lemon Juice

Chocolate Butter Icing

Either 1 teasp Cocoa or 25g/1oz Melted Chocolate

A few drops of Vanilla Extract

Coconut Butter Icing

25g/1oz Desiccated Coconut

Coffee Butter Icing

1 Teasp Instant Coffee dissolved in 2 teasp Hot water.

Cool before adding to the mixture

Lemon Butter Icing

2 teasp very finely grated Lemon Rind

2 teasp Lemon Juice

�
Orange Butter Icing

1 tbsp very finely grated Orange Rind

2 teasp Orange Juice

�
Rum Butter Icing

2 teasp Dark Rum

�
Vanilla Butter Icing

A few drops of Vanilla Essence

�
Coloured Butter Icing

A few drops of Food colouring ��

Key techniques required to make this recipe

Beat � To introduce air into a mixture using a utensil such as a wooden spoon, fork or whisk, in order to achieve a lighter texture.

�

Cream - to - The process where sugar and softened butter are beaten together with a wooden spoon, until the mixture is light, pale and well blended. This process may also be carried out with a hand held mixer or in a food processor.

Tips, Options and Substitutions

Although you can use margarine, butter gives a much better flavour

Make Ahead

Can be made the day before, Cover with clingfilm and refrigerate until ready to use. Best brought back to room temperature before piping.

Freezing

Place in plastic bags, pressing the icing flat. Defrost in the refrigerator and re-whip or stir before using.
