Coffee Cream Sauce

Ingredients:
3 tbsp Sugar
8 Egg yolks
A pinch of
salt
700ml/24 fl.oz
Strong Coffee
90ml/3 fl.oz
Double Cream
Instructions
1. In a bowl,
lightly beat the egg yolks then add the sugar and salt. Gradually add
the coffee.
2. Place the
bowl in a pan of hot water and cook over a medium heat until thickened,
stirring all the time. Cool.
3. Whisk the
cream and fold into the cooled sauce.
