Gluten Wheat Free Eggless
Leek, very finely sliced
Tomatoes, skinned and chopped
Red Capsicums (sweet peppers) chopped
teasp Curry Powder (check ingredients label)
tbsp uncooked Rice
Melt the butter and gently fry the leek without browning.
Add the remaining ingredients, bring to the boil and simmer for 25 minutes.
Push through a sieve or blend in a food processor until smooth.
Return to the pan and gently re-heat.
