Coulis Oriental for Mussels HT ACC 30mins Hot Vegetables Spices Grains Savoury Sauces Accompaniment Gluten Wheat Free Eggless Ingredients 1 Leek, very finely sliced 25g/1oz Butter 4 Tomatoes, skinned and chopped 2 Red Capsicums (sweet peppers) chopped 1 teasp Curry Powder (check ingredients label) 1 tbsp uncooked Rice 250ml/9 fl.oz Milk 200ml/7 fl.oz water Salt and PepperInstructions 1. Melt the butter and gently fry the leek without browning. 2. Add the remaining ingredients, bring to the boil and simmer for 25 minutes. Cool slightly. 3. Push through a sieve or blend in a food processor until smooth. 4. Return to the pan and gently re-heat.
