Gooseberry Compote  Veg  HT  ACC  British    20mins

 

 

Serves  4      Hot   Vegetarian  Savoury  Sauces  Sauce  Gluten Wheat Dairy  Free   Eggless  Britain  Europe

 

Ingredients:

350g/12oz Caster Sugar

540ml/18fl.oz. Water

225g/8oz Fresh Gooseberries, topped and tailed

 

Instructions

 

1. In a large saucepan, dissolve the sugar in the water over a low heat, stirring constantly. Bring to the boil and continue to cook until the mixture is syrupy.

 

2. Add the gooseberries and cook gently for 10 minutes, until soft.

 

3. To serve - strain off the excess juice.

           

Excellent served with Black Pudding Croquettes or Baked Mackerel.
