Gooseberry Compote Veg

Ingredients: 350g/12oz Caster Sugar
540ml/18fl.oz. Water
225g/8oz Fresh Gooseberries, topped
Instructions
1.
In a large saucepan, dissolve the sugar in the water over a low heat, stirring
constantly. Bring to the boil and continue to cook until the mixture is syrupy.
2.
Add the gooseberries and cook gently for 10 minutes, until soft.
3.
To serve - strain off the excess juice.
Excellent served with Black Pudding Croquettes or Baked Mackerel.
