350g/12oz Caster Sugar
225g/8oz Fresh Gooseberries, topped
In a large saucepan, dissolve the sugar in the water over a low heat, stirring
constantly. Bring to the boil and continue to cook until the mixture is syrupy.
Add the gooseberries and cook gently for 10 minutes, until soft.
To serve - strain off the excess juice.
served with Black Pudding Croquettes or Baked Mackerel.
