Hazelnut Sauce for Vegetables Veg HT ACC 15minsHot Vegetarian Nuts Spices Savoury Sauces Accompaniment Ingredients 200g/8 oz Butter 3 Egg yolks 2 tbsp Water 1/4 teasp Cayenne Pepper 1 tbsp Lemon Juice 6 tbsp coarsely chopped Hazelnuts, toastedInstructions 1. Melt the butter over a very low heat then set aside. 2. Put the egg yolks and water into a bowl over a pan of hot water and whisk until creamy. Remove from heat. 3. Whisk in the butter a little at a time then add the cayenne and lemon juice to taste.
4. To serve - pour over boiled or steamed vegetables and sprinkle the hazelnuts on top.
