Lime Sauce for Duck HT ACC 10mins Hot Savoury Sauces Accompaniment Gluten Wheat Free Eggless
In gredients500ml/18 fl.oz Fresh Chicken stock The peel and juice of 2 Limes 50g/2oz Butter Salt and PepperInstructions 1. Boil the stock and reduce to half it's original amount. 2. Meanwhile, remove the peel from the Lime being careful not to include any of the white pith as this makes it bitter. Cut the peel into very fine strips (julienne). 3. Whisk the butter into the sauce little by little then add the Lime juice. 4. Season with salt and pepper and garnish with the peel.
