Prune Sauce for Turkey HT ACC 25mins Hot Fruit Savoury Sauces Accompaniment Ingredients 400ml/14 fl.oz Turkey or Chicken stock 50ml/2 fl.oz Red Wine Vinegar 10 Prunes, stoned Half a Red Chilli, finely chopped 50g/2oz Butter Salt & Pepper Instructions 1. Put the stock, vinegar, prunes and chilli into a saucepan and bring to the boil. Rapidly boil until reduced to half the original amount. 2. Place the sauce in a liquidiser and process until smooth or push through a sieve. 3. Return to the saucepan and gently re-heat adding the butter little by little and stirring continuously. Season with salt and pepper.
