Sauce Bonne Femme for Poultry HT ACC 40mins Hot Vegetables Herbs Alcohol Savoury Sauces Accompaniment Eggless
Ingredients 25g/1oz Butter 3 Mushrooms, sliced 1 Onion, chopped 1 Carrot, thinly sliced 1 Parsnip, chopped A sliver of Garlic 2 Sprigs of Parsley 8 tbsp Stock or Gravy 8 tbsp White Wine Salt and Pepper Grated Nutmeg 2 tbsp fresh Breadcrumbs 600ml/20fl.oz. Milk
Instructions
1. Put the vegetables, garlic and parsley into a saucepan with the butter. Add the gravy, white wine, salt, pepper and grated nutmeg, and boil gently for 30 minutes. Pass through a sieve.
2. Meanwhile, boil the breadcrumbs in the milk until all the milk is absorbed. Sieve this too then add it to the sauce, and heat through.
Can also be served with white fish.
