Tomato Coulis Veg HT ACC 40mins Hot Vegetarian Vegetables Herbs Savoury Sauces Sauce Accompaniment Gluten Wheat Free Eggless
Ingredients 50g/2oz Onion, finely chopped 1 Garlic Clove, finely chopped 50g/2oz Butter 1 x 400g/14oz tin Chopped Tomatoes 50g/2oz Tomato Puree 6 Basil Leaves, chopped 120ml/4 fl.oz. Fresh Vegetable Stock Salt and Pepper
Instructions
1. Gently frying the onion and garlic in 25g/1oz of the butter until soft and transparent. Add the tomatoes, tomato puree, basil and stock and simmer for 15 minutes.
2. Pass through a sieve then return to the pan. Reduce to the desired consistency by rapidly boiling. Season to taste and stir in the remaining butter.
Use with fish, lamb, poultry and game, beef, veal, pork and vegetarian or vegetables.
