Avocado Soup with Tequila   CD  SP  Mexican  10mins plus chilling


Mexican name: Sopa de Aguacate con Tequila


Serves 4   Cold  Fruit  Soup  Starter  Mexico  Nth American  North America



NOTE: Pre-chill all the ingredients

The flesh of 4 Avocados
840ml/28fl.oz. Chicken Stock
180ml/6fl.oz. Evaporated Milk
1 tbsp chopped Spring Onions
2 tbsp Tequila
Salt and Cayenne Pepper

To serve

Sour Cream

Freshly chopped Coriander


1. Place avocados, stock, evaporated milk, spring onions and tequila in a food processor  or blender and process until smooth. You may have to do this in two batches.


2. Taste and adjust the seasoning, adding salt and cayenne, and pulse again briefly.


3. Serve cold with a dollop of sour cream and freshly chopped coriander.

Common terms used when making sauces

Blend - To mix together ingredients, usually of different consistencies, to a smooth and even texture, utilising a utensil such as a wooden spoon or blender.

Coats a spoon – when a substance is rendered thin/thick enough so that when a wooden or metal spoon is inserted into it and taken out, the substance leaves a thin film “coating the spoon”.

Boil - To bring a liquid to boiling temperature and to maintain it throughout the cooking time.

Chop to – To cut into pieces of approximately the same size
