Bacon, Bean and Vegetable Soup HT Pressure Cooker SP English 45mins plus cooling Serves 4 Hot Pork Vegetables Soups Gluten Wheat Free Eggless England British EuropeIngredients 25g/1oz Butter 1 tbsp Oil A 225g/8 oz piece of Boiling Bacon 1 Medium Onion, chopped 1 Carrot, chopped 2 Medium Potatoes, diced ¼ Head of White Cabbage 75g/3oz Haricot Beans, pre-soaked in boiling water for 1 hour 900ml/30fl.oz Water salt and Pepper
Instructions
1. Melt the butter in the open pan, add the bacon and onions and fry gently until the onions are transparent.
2. Add the remaining ingredients, put the lid on, bring to pressure, then reduce the heat and cook for 30 minutes.
3. After the cooking time, remove the pan from the heat and slow release the steam.
4. Allow to cool then skim the surface.
5. Transfer half of the bacon, vegetables and cooking liquor to a blender or a food processor and process until smooth.
6. Return the puréed soup to the remaining soup in the open pan, season with salt and pepper and heat through, stirring.
