Bacon and Quinoa Soup HT SP 120mins

Ingredients
Instructions
1. Melt the oil in a large saucepan, add the vegetables and cook, stirring from time to time, until lightly browned then add the water and bring to a gentle boil.
2. Add the bacon, bay leaf, salt and pepper, reduce the heat, cover and simmer gently for 1/½ hours, adding more water if necessary.
3. Remove the bacon from the pan, cut into pieces, then return to the pan together with the quinoa, bring to the boil then re-cover and cook for a further 15 minutes.
4. To serve - Sprinkle with chopped parsley.
