Capsicum & Celery Soup HT Veg SP 40mins
Serves
4 Hot
Vegetarian Vegetables Soups
Ingredients 1 tbsp Olive Oil 15g/1/2 oz Butter 6 Sticks Celery, chopped 6 Spring Onions, chopped
1 Green Capsicum (Sweet pepper) 1 Garlic Clove, crushed 2 tbsp freshly chopped Parsley 1.1L/2pts Strong Vegetable Stock 25g/1oz Rolled Oats Salt and Black Pepper
Instructions
1.
Heat the oil and butter in a pan add the celery, onions, pepper and garlic and
peppers and sauté until softened.
2.
Add the parsley, stock, oats and seasoning, bring to the boil then cover and
simmer for 20 minutes.
3.
Allow to cool slightly then transfer to a liquidiser or food processor and
process
4. Return to the saucepan, heat through and serve hot.
