Serves 4-5 Hot Vegetarian Vegan

2 tbsp Vegetable Oil
1 Large Onion, chopped
2 Garlic Cloves, crushed
1 tbsp Freshly Chopped Coriander (cilantro)
400g/14oz Cooked Chickpeas (fresh or tinned)
360ml/12fl.oz Fresh Tomato Juice
50g/2oz Long Grain Rice
Salt and Pepper
¼ teasp Ground Cumin
¼ teasp Ground Allspice
1. Heat the butter in a large saucepan, add the garlic and onions and sauté
gently until golden brown.
2. Add the coriander and sauté, stirring, for 3-4 minutes.
3. Add the remaining ingredients and bring to a boil, stirring. Reduce the heat
to medium/low and cook for 20-25 minutes or until the rice is tender.
