Green Soup       HT  SP  Myanmar  35mins

Myanmar Name: Chin Yay Hinn

Serves 4-6      Hot  Vegetable  Fish  Soup  Burmese  Burma  Asia  Asian


Ingredients
2 teasp Sesame Oil
1 Onion, finely sliced
2 Garlic Cloves, crushed
½ teasp Ground Turmeric
2 Green Tomatoes, chopped
50g/2oz Greens e.g. spinach, Spring Greens
1.1L/40fl.oz. Fish Stock
1 teasp Shrimp Paste or Ngapi

Instructions

1. Heat the oil in a large saucepan add the onion, garlic and turmeric and fry, stirring for 30 seconds.

2. Add the tomatoes, greens, stock and shrimp paste, bring to the boil stirring well then reduce the heat and simmer for about 10 minutes or until the vegetables are tender. Serve hot.
