Lentil
Soup Recipe HT SP 40mins
Below is an easy to make Lentil Soup recipe
Serves
4 Hot Soups Starter Ingredients 2
tbsp Olive Oil 2
Carrots, finely chopped 1
Large Onion, finely chopped 2
Sticks Celery 2
Garlic Cloves, finely chopped 1
Bay Leaf 1.2L/40fl.oz.
Strong Stock (lamb, beef, chicken or vegetable) 225g/8oz
Lentils, washed and picked over if necessary 1tbsp
freshly chopped Thyme 1
teaspoon Balsamic Vinegar or Worcestershire Sauce Salt
and Black Pepper Instructions 1.
Place
the oil, carrot, onion, celery and garlic in a large saucepan and cook over a
medium heat, stirring from time to time, until the vegetables are just tender. 2.
Add
the stock, lentils, bay leaf and thyme, bring to the boil then reduce the heat,
partially cover and simmer for 25 minutes, stirring from time to time. 3.
Stir
in the vinegar or Worcestershire Sauce, season
to taste with salt and pepper and simmer for a further 2-3 minutes. Serve hot.
