Mexican Name: Sopa de Fideos
Ingredients 960ml/32fl.oz.
Fresh Chicken Stock 225g/8oz
Mexican Fideo or Angel Hair Pasta
1. Place the chicken stock in a large saucepan and bring to a simmer.
2. Meanwhile, place the tomato, onion and garlic in a blender with enough of the stock to allow the blades to move, and puree. Set aside.
3. Heat the corn oil in a large saucepan, add the noodles and sauté, stirring constantly, until just golden.
4. Add the pureed tomato mixture and stir to coat the noodles well.
5. Add the stock and season with salt. Continue to cook for a few minutes until the noodles are tender. Serve immediately.
