Potato and Olive Oil Soup Veg HT SP 100mins
Serves 4 Hot Vegetarian Vegan Gluten Wheat Free Dairy Free Eggless
Ingredients 900ml/30fl.oz. Water 2 Tomatoes, peeled and chopped 1 large Onion, chopped 4 Garlic Cloves, chopped 240ml/8fl.oz. Olive Oil 3 Bay Leaves 8 Black Peppercorns Salt 3 large Potatoes, peeled and thickly sliced
Instructions
1. Place all the ingredients (apart from the potatoes) in a large saucepan, bring to the boil stirring then reduce the the heat, cover, and simmer for 45 minutes.
2. Add the potatoes and simmer for at least a further 45 minutes. The longer it's cooked the better. Remove the bay leaves before serving.
