Student Meatball Soup HT SP 55mins Serves 1-2Hot Meat Soups Gluten Wheat Dairy free EgglessIngredients 300ml/10fl.oz. Beef Stock 25g/1oz Lentils 100g/4oz Minced Beef or Lamb ½ Onion, finely chopped½ teaspoon Dried Mixed herbs Salt and Black Pepper 2 Spring Onions, chopped 1 tbsp Fresh Parsley, choppedInstructions 1. Place the water in a medium sized saucepan, add the lentils, bring to the boil then simmer for 20 minutes. 2. Meanwhile, in a bowl, mix together the mince, onions, herbs, salt and pepper. Shape into small walnut sized balls and set aside while the lentils are cooking. 3. Add the meatballs, spring onions, parsley, salt and pepper to the lentils, partially cover and simmer for a further 30 minutes, stirring from time to time and adding a little water if necessary.
