tbsp Lemon Juice
tbsp Single Cream
Heat the stock in a saucepan and bring to the boil.
Cut the avocados in half lengthways and remove the stone. Scoop out the flesh and place in a bowl together with the egg yolk and
cream. Mash well.
Remove stock from heat. Gradually add the avocado mixture to the stock, whisking
vigorously. Season to taste with salt and pepper. Chill for at least 1 hour and
