Bean Soup HT SP 30mins Serves 4 Hot Beef Pork Vegetables Pulses Soups
Ingredients: 100g/4oz Streaky Bacon 1 Red Capsicum, half sliced, half chopped 1 Green Capsicum, half sliced, half chopped 1L/35fl.oz. Water 3 Beef Stock Cubes 1 x 400g/14oz tin White Beans Tabasco Sauce Salt 4 tbsp Soured Cream
Instructions
1. Lightly fry the bacon in a frying pan until the fat begins to run.
2. Transfer to a large saucepan and add the chopped capsicum, stock cubes, water and drained beans. Bring to the boil and simmer for 20 minutes.
3. Blanch the capsicum slices in boiling water for 5 minutes.
4. Remove the soup from the heat, add Tabasco sauce and salt to taste then stir in the soured cream.
5. To serve - garnish with the blanched capsicum slices.
